For some, Scandinavian cuisine can bring some pretty questioning looks. Lutefisk, anyone? What we’ve found, however, is an amazing lens in which to examine and progress Midwest based cooking. Traits such as agricultural diversity, hyper-local food production, work ethic, our lakes, and our four beautiful seasons all seem to line up to a common bond that lies thousands of miles away. Heck, we even share a lot of ancestry in this part of the country.
